Dairy Free Lime Pie

I was gifted a bunch of beautiful homegrown limes from my father-in-law over the weekend, so of course I had to put them to good use asap. And create something that gives this organic fruit a proper justice. And I think I did pretty well with my healthy Dairy Free Lime Pie. It’s just sweet enough, with a delicious zing and it takes a little bit of resistance to eat only one piece. The recipe is gluten and sugar free and as the name suggests without dairy as well, so it’s suitable for Paleo, low carb or keto diet. And with a little swap it can be vegan too. Perfect afternoon treat which is full of flavour while not loaded with refined sugar and white flour.

Ingredients
  • For the base:
  • ½ cup almond meal
  • ⅓ cup coconut flour
  • ⅓ cup desiccated coconut
  • 4 tbsp linseed meal
  • 4 tbsp water
  • 2 tbsp coconut oil
  • Pinch of salt

  • For the filling:
  • 2 cups of coconut yoghurt
  • 2 tbsp gelatin (dissolved in 4 tbsp hot water) - you can swap this for agar agar to make the pie vegan
  • 1 tbsp grated lime zest
  • Juice of 4 limes (2/3 cup)
  • Sweetener of choice (I used 3 tbsp of stevia)
Instructions
  1. Mix the linseed with 4 tbsp of water to create a “flax egg”.
  2. Put all the ingredients for the base in a bowl, add the flax egg and mix everything thoroughly.
  3. Press the base mixture in greased pie form with your fingers, covering the whole surface. Make sure that the pastry is not more than a few mm high.
  4. Place the form into a preheated oven at 160 C for 30 minutes.
  5. Then take it out and let it cool down completely before putting the filling on.
  6. While the base is in the oven, start with the filling.
  7. Dissolve the gelatin in hot water.
  8. Put the coconut yoghurt in a small pan. Add the lime zest, lime juice and a sweetener. Place the pan with the yoghurt over a medium heat and warm it up, stirring constantly. If we mixed the gelatin in cold it would get clumpy.
  9. Once the yoghurt gets warm take it out of the heat and whisk in the gelatin.
  10. Let the mixture cool to room temperature. Then pour it over the cooled base and smoothen it out with a spatula.
  11. Place the pie in a fridge and let it set for at least 2-3 hours.
  12. Keep in the fridge for up to 5 days.
