Chocolate Mug Cake (Paleo, Low Carb, Keto)
You probably already know that I am not a huge fan of sweet breakfasts, normally. And it’s because I simply don’t find them filling enough. And I am usually really hungry in the morning 😀 Also I don’t think that a sweet breakfast is very nourishing in comparison with something like veggies and eggs (which I have on most mornings). But of course I do like to break things up and have a sweet breakky every now and then too. And this is currently my absolute favourite.
Because it takes literally 5 minutes all up, but at the same time I feel like I’m really treating myself. Well, with a cake for breakfast I really am, right? But don’t worry, if you’d like to give the Chocolate Mug Cake (Paleo, Low Carb, Keto) a go too, I promise it’s full of good ingredients only and when you top it off with coconut yoghurt and fresh fruit, you’re in for a pretty filling and nourishing meal.
- 1 egg
- 2 tbsp coconut cream
- 1 tbsp cocoa powder
- ½ tbsp flaxseed meal
- ½ tbsp coconut flour
- ¼ tsp baking powder
- ½ tsp psyllium husk
- Vanilla
- Mix all the ingredients together and pour them into a small greased mug or bowl.
- Place the mug into a microwave for 3 minutes on high.
- Let the cake cool slightly before taking it out by turning the mug upside down (the mug will be very hot).
- Serve for example with Homemade Coconut Yoghurt and fresh fruit.
