BBQ Chicken Drumsticks (Paleo, Low Carb, Keto)
So, if you follow my Instagram or Facebook, you would probably know that we are basically homeless right now 😀 Nooo, just kidding. We are pretty far from that. However, we went through some trouble with real estate (couldn’t believe how stressful moving can get) and ended up without an apartment. But luckily we have amazing friends we can stay at and of course amazing family that’s always here if we need help.
But before we find the right place for us, I might not be able to conjure in the kitchen as much as I’m used to. Because, let’s be honest, I’m a mess 😀 And I don’t think our friends would like to see their kitchen in the process of my creations, since it usually looks like a bomb explosion. But luckily I have a few recipes up my sleeve, so now it’s the perfect time to share them. Starting with the simplest yummiest BBQ Chicken Drumsticks (Paleo, Low Carb, Keto).
Well, I could actually make these even now, because as said, they are super easy to make, so it wouldn’t be such a disaster. But since we are on the Whole30, they are a no-no (one of the sauces used contains corn starch and stevia, which I don’t use much even under normal circumstances, but at a same time don’t worry too much if a product uses tiny amounts like this). But of course, you can use a homemade BBQ sauce that is compatible with the Whole30 rules. It might just take a little bit more time.
- Mix all the ingredients for the marinade in a large bowl. Then add the chicken drumsticks and massage the marinade onto the meat. Cover the bowl and let it rest in the fridge for at least one hour prior cooking.
- Preheat an oven on 180 °C. Mix the chicken with the marinade one more time and then transfer everything into a baking dish.
- Place the baking dish uncovered into the oven and bake the chicken for about 45 minutes.
- Serve the chicken drumsticks with your favourite salad, roasted vegetables or for example with my /cauliflower-puree-paleo-whole30-low-carb/ or Fennel And Butternut Squash Puree.
